Travel has always been central to Nicolas Isnard’s life and cuisine, an early inspiration even before cooking itself. At culinary school, when asked why he chose this path, he simply replied, “to travel.”
His childhood flavors reflect a blend of Mediterranean roots from his father and French traditions from his mother, where polenta and gnocchi met Sunday lamb and potatoes with garlic and thyme.
While traveling the Mediterranean coast, he discovered Sotogrande, a luxury hotel on the Costa del Sol. Inspired by Andalusian ingredients, he created dishes that honor this rich terroir while adding his bold, creative touch.
